Hi I'm Eileen

I'm a wife, a stay at home mom of 6, a grandmother & a wellness Consultant. I make the best cheesecake and I'm a Mormon.

About Me

I was married 13 years to an LDS man who developed a drug addiction. He was like Dr. Jekyll and Mr. Hyde; a hidden side of him that few knew about. Two months after our 5th child was born he was shot by the police and died. I've had to overcome a lot of difficulties in life but I have found that when I trust in the Lord I am happiest. I learned from an early age to forgive and to be patient in my afflictions. Now I am married to a wonderful man. We were sealed in the temple for time and all eternity and have had a child together. Life is good. I am greatly interested in health & helping my family to be healthier. As a wellness consultant I teach people how to be well, naturally, and to live a balanced life. We eat local and in-season vegetables & eggs from pastured, local chickens and very little meat (again, from local, pastured animals). I make lard & am learning how to make jam. One day I would like to have my own homestead or farm. I birthed two of my babies at home (one was a water-birth) and breastfed all of them, some for several years. I have always made it a priority to be home with my children. I enjoy watching my little granddaughter. I love to learn and love the internet for that. My passion is baking cheesecake. I love to watch others enjoy it. I also bake gluten-free. I sing in the choir at church. I am not a professional singer, by any means, but I enjoy singing and feel like I am contributing to our small choir.

Why I am a Mormon

I have a long Mormon heritage on my mother's side. Her ancestors, among them John Pack, who was the among the first pioneers to enter the Salt Lake Valley, joined the church in it's early days. My father and his parents joined in New Jersey when he was a teenager. They were the first member of the church in that area, so, in a sense, I have pioneers on both sides. I grew up a member of The Church of Jesus Christ of Latter-day Saints and my testimony grew little by little. The Holy Ghost continues to manifest to me that the church is true. Living the gospel of Jesus Christ makes me happy and keeps me safe. I find joy in helping others. I know it is true because Heavenly Father keeps answering my prayers and I feel of His love.

How I live my faith

I live my faith by being obedient and keeping the commandments. I am not always the best at this but I am sincerely trying. I was recently a Ward missionary where I served for two years (locally) and had opportunities to help the full-time missionaries and share the gospel with others. I found that when I studied the scriptures more diligently I had the Holy Ghost with me in more abundance. I had great joy watching investigators come into the fold and be baptized, and being a friend to them.
